Pour Coconut Milk in a saucepan over medium heat, for about 3 minutes till a little bit of steam rises from Milk. Add in the grated ginger, ground turmeric / cinnamon, salt & pepper – stirring well to mix thoroughly. Take milk off heat & mix in vanilla extract, then add in Honey / Maple Syrup – stirring continuously.
After sampling a taste, heat again for about 2 minutes – this helps reintegrate the flavors & will bring out the rich golden color in the milk. Best served hot / warm before bedtime – use a medium sized strainer to strain mixture & remove any fibrous ginger! Decorate with Mint leaves or springs of Rosemary & serve!
